Fielding Estate Red Conception

Each variety was vinifiedseparately and aged for just over one year in oak barrels from selected coopers. The wines selected for the final blend were chosen for their approachability; focus on fruit-driven aromatics, soft tannins, and rich mouthfeel. Medium red in color with inviting aromas of: blackberry, plum, licorice, cedar-smoke and spices. Midweighton the palate with a nice mouthfeel, good structure, and flavors that carry on the finish. An excellent “food wine” that can easily be paired with a number of dishes. (Alc. 12.5%)

Fielding Estate Cabernet Franc

After a total maceration time of 28 days on average, each lot was drained and pressed using a traditional wooden basket press. Racked off coarse solids into barrel, the wine spent the just over one year in barrel without racking or stirring, and underwent a full malolactic fermentation. Deep red in color with a youthful purple rim, the nose of this wine is quite expressive with violets, wild blueberry, cedar-smoke, and dark chocolate. Midweight on the palate with fine-grained tannins and a lengthy, spice-filled finish. (Alc. 13.5%) 

Fielding Estate - Estate Bottled Chardonnay

Selected from grapes in our estate vineyard, gently pressed and cold settled in stainless steel for a short period before being transferred into a mixture of older and new barrels. Barrel-fermented at warm temperatures using both commercial and “wild” yeast. Approximately half of the barrels were allowed to go through malolactic fermentation. Light gold in color with integrated aromas of green apple, stone fruit, and warm spices. Citrus flavors shine on the palate, with a rich texture and good acidity. (Alc. 12.5%) 

Fielding Estate Pinot Gris

Vineyard sites from different VQA sub- appellations were selected and harvested at different stages to help bring different flavor profiles to the final wine. The grapes were cold-soaked on the skins for a short period before pressing and cold settling. Clarified juice was fermented at cool temperatures in stainless steel for an average of four weeks, and kept on light lees post-fermentation to help build richness and improve balance in the final wine. Light gold in color with brilliant clarity. Inviting aromas of fresh pear, cantaloupe, honey, marzipan, and tangerine.

Fielding Estate Riesling

Selected from multiple vineyards, each parcel was harvested separately, based on the flavors that had developed and the natural acidity in the grapes. Each lot of grapes were gently pressed with no skin contact, and cold settled for five days on average, resulting in clear juice with very few solids. The juice was then fermented at cold temperatures in stainless steel tanks using multiple yeast strains for an average of twenty-five days. Integrated aromas of candied lime, orange marmalade, white peach, and pink grapefruit; complimented by floral and spice notes.

Hidden Bench Pinot Noir

Ruby red in colour, an expressive nose of red cherry, ripe field strawberry and delicate dried herbs leads to a savory palate with supple tannins and elegant structure. The finish is long, clean and mineral.  (Alc. 13.5%)    Wine Align 4.5 / 5 points 

Hidden Bench Chardonnay

The fragrant and perfumed nose shows aromas of white flowers, apricot, and smoked almonds. The palate is appealing for its rich toast and creamy nature and finishes with an intense dry minerality. (Alc. 13.5%)    Burghound 90  points

Tawse Cabernet Franc Laundry Vineyard

Tawse Winery has been sourcing fruit from the sustainably-farmed Laundry vineyard since 2001. Home to some of the oldest Cabernet Franc vines in Niagara, this vineyard benefits from the tempering effect of Lake Ontario and produces aromatic and complex wines. Aged 18 months in French oak, this expressive yet structured Cabernet Franc has a layered nose of raspberry, blackberry, mint and cedar. On the palate, it delivers notes of black cherry, ripe plum and a hint of white pepper supported by generous but firm tannins and a lingering finish. (Alc. 13%)

Tawse Cabernet Franc Grower's Blend

Tawse's Grower's Blend was created to showcase the Niagara Peninsula sites where Cabernet Franc expresses its full potential. This robust yet lively wine is aged in French oak for 14 months. It displays bright acidity, smooth tannins and notes of dark berries, dried herbs and cedar. Its deep color, intense nose and great structure make it everything a Franc lover could hope for. Tawse Chardonnay

The expressive nose shows ripe apple and pungent citrus, as well as the local, characteristic mineral notes. On the palate this wine shows ripe apple and lemon zest, with perfectly balancing acidity. There is a rich and slightly creamy texture in the mouth, and just enough complementing barrel notes of toasty French oak. This wonderfully complex palate translates into a lengthy, enjoyable finish.
